Integrating the Line, we did not have a ton of space to work with and creating this really improves the efficiency of our kitchen. Integrating is all about teamwork and using the best use of the space. How many times have you worked in the kitchen where one station is getting buried with tickets and you either cannot help because of space or you are just reaching over each other to help? We now can spread out menu items, able to identify ways to be more efficient during busier periods and the line allows us to make those adjustments as needed. We have enough refrigeration on the line to have mirror station if needed or mirrored set ups for certain items so that if one station is getting a lot of orders another station can take that off their plate. Again, the whole concept is about flexibility, efficiency, and teamwork.
This team came in watched and listen and really got to know the operation before starting to make suggestions. It was a partnership, with a lot of thoughts and ideas exchanged that really helped shape the framework of the design. The Hanging Shelf, it is the hub of the kitchen. We expanded our plating area, created flexibility to have warm/cold areas at a flip of switch. It gives the best flexibility, the traditional Garde Manger station now is able to have salads and hot appetizers go into the same window and half can be warm and half can be cold but if I change the menu tomorrow I can flip that however we need. As well ever piece of equipment underneath for the most part can be rolled out, switched to again adapt with
